I finally made it home from the hospital — after an unplanned, five day stay. I’m still trying to wrap my head around the fact that I’m going to lose most of April to rest and healing. And am I ever glad that I started monthly menu planning because I’m not exactly in any shape to try and organize meals. My husband is a good cook as long as he has a plan and directions and the monthly menu provides both!
We have been very blessed by family and friends who have provided meals for us. I’m pretty sure we have enough food to last us a couple of weeks. But I thought I’d still share what I’d planned to make this week, just in case you wanted to try out a recipe or two.
Monday: Brats on the grill, potatoes
Tuesday: Sashimi salmon, coleslaw, rice
Wednesday: Chicken curry
Thursday: Pizza
Friday: Hamburgers
